  Термин, применяемый для описания двух различных явлений. С одной стороны, гидрофобные взаимодействия характеризуют специфическое взаимодействие гидрофобных поверхностей, разделенных прослойкой полярного растворителя, в основном воды. С другой стороны, гидрофобные взаимодействия возникают между гидрофобными молекулами (фрагментами молекул) и молекулами полярного растворителя (водной среды) и являются причиной фазового разделения жидких смесей, содержащих полярные и неполярные молекулы.
